Antioxidant Effect of Tocopherols and Tocotrienols and cis/trans - , trans/trans - Hydroperoxide Isomer from Linoleic Acid Methylester

Abstract

|
Antioxdant effect was studied in model system with linoleic acid methylester and tocochromanols (¥á-. ¥â-, ¥ã-, ¥ä-tocopherol and ¥á-, ¥ã-, ¥ä-tocotrienol) under definite autoxidation condition-temperature (40, 60, 80 ¡É), 0©ü (0, 10, 20% O©üin N©ü). 13-Hydroperoxy-9-cis-ll-trans-, 13-hydroperoxy-9-trans-ll-trans9-hydroperoxy-l0-trans-l2-cis-, 9-hydroperoxy-l0-trans-l2-trans-octadecadienoic acid methylester as the major oxidation product were produced from linoleic acid methylester by autoxidation, analyzed with HPLC and antioxidant activities were compared by their quantitative changes. Experimental resuIts showed that all added tocochromanols except ¥á-tocotrienol had antioxidant effect at 60¡É , and also ¥á-tocopherol, ¥á-tocotrienol and ¥ä-tocotrienol had prooxidant effect at 80¡É . And cis/traps-hydroperoxide was predominantly produced at 40¡É , but traps/traps-hydroperoxide at 80¡É . Except no reproductive experimental data in produced hydroperoxides amount, the production ratio of cis/traps-: traps/traps-hydroperoxides in the autoxidation condition of range from 40C /107 0 to 60-C /20% O. were as follows: ¥á-T$gt;¥á-T©ý,$gt;¥ã=T$gt;¥â-T$gt;¥ã-T©ý,$gt;¥ä-T$gt;¥ä-T©ý. $quot;This result showed that ¥á-tocopherol among tocochromanols had the lowest antioxidant effect.
